Low Carb Buffalo Chicken Ranch Casserole - Creamy, Spicy, and Weeknight Easy

Ingredients
  

  • 4 cups cooked, shredded chicken (rotisserie works great)
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo wing sauce (adjust to taste)
  • 1/2 cup ranch dressing (store-bought or homemade)
  • 1/2 cup sour cream (or Greek yogurt)
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 small red onion, finely diced (about 1/3 cup)
  • 1 small bell pepper, finely diced (optional for crunch)
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh chives or green onion, for garnish
  • Crumbled blue cheese, for topping (optional)
  • Neutral oil or cooking spray for the baking dish

Method
 

  1. Preheat and prep. Heat your oven to 375°F (190°C). Lightly oil or spray a 9x13-inch baking dish.
  2. Soften the base. In a large bowl, combine cream cheese, ranch dressing, sour cream, and buffalo sauce. Stir until smooth. If the cream cheese is too stiff, microwave it for 10–15 seconds to soften.
  3. Add seasonings and aromatics. Mix in garlic, onion powder, smoked paprika, and a pinch of salt and pepper. Fold in the diced red onion and bell pepper.
  4. Stir in the chicken and cheese. Add shredded chicken, 1 cup mozzarella, and the cheddar. Toss until everything is evenly coated in the creamy sauce.
  5. Assemble. Spread the mixture into the prepared baking dish. Top with the remaining 1/2 cup mozzarella. If you like, sprinkle a small amount of crumbled blue cheese on top for extra tang.
  6. Bake. Place in the oven and bake for 18–22 minutes, until the cheese is melted and bubbly around the edges.
  7. Finish and rest. Let the casserole sit for 5 minutes to set. Garnish with chopped chives or green onion. Add a drizzle of buffalo sauce or ranch on top if you want more zing.
  8. Serve. Spoon into bowls or serve with low-carb sides like cauliflower rice, roasted broccoli, or a simple green salad.
