Ingredients
  

  • 1.5 pounds large shrimp (16–20 count), peeled and deveined, tails on or off
  • 2 tablespoons avocado oil or olive oil
  • 2 limes (zest of 1, juice of both)
  • 3–4 cloves garlic, minced
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional, for depth)
  • 1/4–1/2 teaspoon red pepper flakes or a pinch of cayenne (to taste)
  • 2 tablespoons fresh cilantro, finely chopped (plus extra for garnish)
  • 1 tablespoon unsalted butter or ghee (optional, for finishing)
  • Lime wedges, for serving
  • Metal or soaked wooden skewers

Method
 

  1. Prep the skewers: If using wooden skewers, soak them in water for at least 20–30 minutes so they don’t burn on the grill or under the broiler.
  2. Make the marinade: In a medium bowl, whisk together the oil, lime zest, lime juice, garlic, salt, pepper, smoked paprika, red pepper flakes, and cilantro. Taste and adjust salt or heat as needed.
  3. Pat shrimp dry: Use paper towels to remove excess moisture. Dry shrimp sear better and won’t steam on the grill.
  4. Marinate briefly: Toss the shrimp with the marinade and let them sit for 10–15 minutes. Do not exceed 30 minutes or the lime juice can start to toughen the shrimp.
  5. Thread the shrimp: Skewer the shrimp in a “C” shape, packing them close but not overlapping. This helps them cook evenly and makes flipping easier.
  6. Preheat the heat source: Heat a grill to medium-high, preheat a grill pan over medium-high, or set your oven broiler to high. You want the surface hot before the shrimp go on.
  7. Cook quickly: Grill or broil the skewers for 2–3 minutes per side, until shrimp turn pink and opaque with light char marks. Do not overcook; they should be just firm and juicy.
  8. Optional buttery finish: Immediately brush the hot skewers with melted butter or ghee for extra richness and shine.
  9. Garnish and serve: Sprinkle with fresh cilantro and serve with lime wedges. Pair with a crisp salad, cauliflower rice, or grilled zucchini for a full keto meal.
