Keto Crockpot Smothered Pork Chops - Cozy, Comforting, and Low-Carb

Ingredients
  

  • Pork chops: 4–6 boneless or bone-in chops, about 1-inch thick
  • Onion: 1 large, thinly sliced
  • Garlic: 3–4 cloves, minced
  • Mushrooms (optional but great): 8 ounces, sliced
  • Butter: 2 tablespoons
  • Olive oil or avocado oil: 1 tablespoon
  • Chicken broth: 1 cup (look for low-sodium, no sugar added)
  • Heavy cream: 1/2 cup
  • Cream cheese: 4 ounces, softened
  • Dijon mustard: 1 tablespoon
  • Worcestershire sauce: 1 teaspoon (check labels for sugar)
  • Xanthan gum: 1/2 teaspoon (for thickening; optional)
  • Smoked paprika: 1 teaspoon
  • Dried thyme: 1 teaspoon
  • Salt and black pepper: to taste
  • Fresh parsley: for garnish (optional)

Method
 

  1. Season the pork chops. Pat the chops dry and season both sides with salt, pepper, smoked paprika, and dried thyme. Don’t be shy—seasoning now builds flavor later.
  2. Sear for extra flavor (optional but recommended). Heat olive oil and butter in a skillet over medium-high heat. Sear chops 2–3 minutes per side until golden. You’re not cooking them through—just building a crust.
  3. Layer the aromatics in the crockpot. Add sliced onions and mushrooms to the bottom of the slow cooker. Scatter the minced garlic on top.
  4. Transfer the chops. Place the seared pork chops over the onion-mushroom mixture.
  5. Mix the sauce base. In a bowl, whisk together chicken broth, Dijon mustard, Worcestershire sauce, and a pinch of salt and pepper. Pour this mixture over the chops.
  6. Cook low and slow. Cover and cook on Low for 4–6 hours, or on High for 2.5–3.5 hours. Aim for internal temp of 145°F and very tender meat.
  7. Finish the gravy. About 20 minutes before serving, whisk cream cheese and heavy cream until smooth. Stir this mixture into the crockpot. If you want the gravy thicker, sprinkle in xanthan gum while whisking to avoid clumps. Cook covered for 15–20 minutes more to let it set.
  8. Taste and adjust. Check salt, pepper, and acidity. A little extra Dijon brightens the sauce if needed.
  9. Serve. Spoon the onion-mushroom cream gravy over the chops. Garnish with chopped parsley. Great with mashed cauliflower, sautéed green beans, or a crisp salad.
