Keto Crockpot Bacon Wrapped Chicken - Easy, Flavorful, and Low-Carb

Ingredients
  

  • 4 boneless, skinless chicken breasts (or 6 small breasts)
  • 8–12 slices of thick-cut bacon (2–3 slices per breast)
  • 2 tablespoons butter, melted
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme or Italian seasoning
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon kosher salt (reduce if bacon is very salty)
  • Optional: 1 tablespoon sugar-free brown “sweetener” for a sweet-smoky finish
  • Optional: 1/4 cup chicken broth for extra sauce
  • Fresh parsley, chopped, for garnish

Method
 

  1. Prep the slow cooker: Lightly grease the crockpot insert or line it with a slow-cooker liner for easy cleanup.
  2. Mix the spice rub: In a small bowl, combine garlic powder, onion powder, smoked paprika, thyme, pepper, and salt. If using the sweetener, stir it in.
  3. Season the chicken: Pat the chicken dry. Brush with melted butter, then coat all sides with the spice mix. Dry chicken helps the spices stick and keeps bacon from slipping.
  4. Wrap with bacon: Lay 2–3 slices of bacon around each chicken breast, slightly overlapping. Tuck ends underneath. If needed, secure with toothpicks placed horizontally so they’re easy to remove later.
  5. Add to the crockpot: Place the bacon-wrapped chicken in a single layer. If you want a bit more sauce, pour 1/4 cup chicken broth around (not over) the chicken.
  6. Cook low and slow: Cover and cook on Low for 3.5–4.5 hours or on High for 2–3 hours, until the chicken reaches an internal temperature of 165°F (74°C).
  7. Optional crisp finish: For crisper bacon, carefully transfer the chicken to a baking sheet and broil for 2–4 minutes, watching closely.
  8. Rest and sauce: Let the chicken rest 5 minutes. Spoon the buttery bacon drippings from the crock over the top. Garnish with parsley and serve.
