Keto Buffalo Chicken Chili - Spicy, Creamy, and Low-Carb Comfort Food

Ingredients
  

  • Cooked chicken (shredded; rotisserie or poached) – about 4 cups
  • Butter or avocado oil – 2 tablespoons
  • Yellow onion – 1 medium, diced
  • Celery – 3 ribs, diced
  • Garlic – 4 cloves, minced
  • Cauliflower rice – 2 cups (fresh or frozen)
  • Chicken broth – 4 cups (low-sodium)
  • Buffalo hot sauce – 1/2 to 3/4 cup (to taste)
  • Tomato paste – 2 tablespoons
  • Cream cheese – 8 ounces, softened and cubed
  • Heavy cream – 1/2 cup
  • Ranch seasoning or dried herbs (dill, parsley, onion powder, garlic powder) – 1 to 2 tablespoons
  • Smoked paprika – 1 teaspoon
  • Ground cumin – 1 teaspoon
  • Salt and black pepper – to taste
  • Blue cheese crumbles – for topping (optional)
  • Green onions – sliced, for garnish
  • Fresh cilantro or parsley – chopped, optional

Method
 

  1. Sauté the aromatics: In a large pot or Dutch oven, heat butter over medium heat. Add onion and celery with a pinch of salt. Cook 5–7 minutes until softened. Stir in garlic and cook 30 seconds until fragrant.
  2. Build the base: Add tomato paste, smoked paprika, and cumin. Stir for 1 minute to toast the spices and darken the paste slightly.
  3. Add broth and cauliflower: Pour in chicken broth and bring to a gentle simmer. Stir in the cauliflower rice. Cook 5–6 minutes until the cauliflower is tender.
  4. Stir in chicken and hot sauce: Add shredded chicken and 1/2 cup buffalo sauce. Simmer 5 minutes to warm through. Taste and add more hot sauce if you want extra kick.
  5. Creamy finish: Reduce heat to low. Add cream cheese in small cubes, stirring until fully melted and smooth. Slowly stir in heavy cream.
  6. Season: Add ranch seasoning (or herb blend), plus salt and pepper to taste. If it’s too thick, add a splash of broth. If too thin, simmer a few more minutes.
  7. Serve: Ladle into bowls. Top with blue cheese crumbles, green onions, and herbs. Add an extra drizzle of buffalo sauce if you like it spicy.
