Sauté the aromatics: In a large pot or Dutch oven, heat butter over medium heat. Add onion and celery with a pinch of salt.
Cook 5–7 minutes until softened. Stir in garlic and cook 30 seconds until fragrant.
Build the base: Add tomato paste, smoked paprika, and cumin. Stir for 1 minute to toast the spices and darken the paste slightly.
Add broth and cauliflower: Pour in chicken broth and bring to a gentle simmer.
Stir in the cauliflower rice. Cook 5–6 minutes until the cauliflower is tender.
Stir in chicken and hot sauce: Add shredded chicken and 1/2 cup buffalo sauce. Simmer 5 minutes to warm through.
Taste and add more hot sauce if you want extra kick.
Creamy finish: Reduce heat to low. Add cream cheese in small cubes, stirring until fully melted and smooth. Slowly stir in heavy cream.
Season: Add ranch seasoning (or herb blend), plus salt and pepper to taste.
If it’s too thick, add a splash of broth. If too thin, simmer a few more minutes.
Serve: Ladle into bowls. Top with blue cheese crumbles, green onions, and herbs.
Add an extra drizzle of buffalo sauce if you like it spicy.
