Ingredients
  

  • Fresh jalapeños (10–12 medium) – Look for firm, glossy peppers.
  • Thick-cut bacon (10–12 slices) – Regular-cut works too; adjust cook time.
  • Cream cheese (8 oz, softened) – Full-fat for best texture and keto-friendly fats.
  • Cheddar cheese (optional, 1/2 cup shredded) – For extra sharpness.
  • Green onion or chives (optional, 2 tablespoons, finely sliced) – Fresh, mild bite.
  • Garlic powder (1/2 teaspoon)
  • Onion powder (1/2 teaspoon)
  • Smoked paprika or chili powder (1/2 teaspoon) – Adds warmth and color.
  • Salt and black pepper – To taste.
  • Toothpicks – Helpful for keeping bacon secure.
  • Nonstick spray or parchment paper – For easy cleanup.

Method
 

  1. Preheat and prep: Heat the oven to 400°F (205°C). Line a baking sheet with parchment paper or a wire rack set over the sheet.
  2. Soften the cream cheese: Let it sit at room temperature for 20–30 minutes, or gently warm in the microwave for 10–15 seconds until spreadable.
  3. Prepare the jalapeños: Slice each pepper lengthwise. Use a spoon to scrape out seeds and membranes. For less heat, remove more of the white pith.
  4. Mix the filling: In a bowl, combine cream cheese, garlic powder, onion powder, smoked paprika, a pinch of salt and pepper, and optional cheddar and chives. Stir until smooth.
  5. Fill the halves: Spoon or pipe the filling into each jalapeño half. Don’t overfill—keep it just below the edge so it doesn’t spill out during baking.
  6. Wrap with bacon: Cut bacon slices in half if they’re long. Wrap each filled jalapeño with a half slice, stretching gently so it overlaps slightly. Secure the end with a toothpick if needed.
  7. Arrange for crisping: Place the wrapped peppers seam-side down on the rack or parchment. Leave space so air can circulate.
  8. Bake to perfection: Bake 18–25 minutes, depending on bacon thickness. You want the bacon browned and crisp, and the cheese bubbling. If needed, broil for 1–2 minutes at the end for extra crispness.
  9. Rest briefly: Let them sit for 3–5 minutes before serving. This helps the cheese set and keeps the bacon crisp.
  10. Serve: Enjoy as-is or with a light squeeze of lime, a sprinkle of chopped cilantro, or a dusting of extra paprika.
